Kolby was founded in 1997 by Oldřich Drápal. The winery got its name from the slope of the same name located in close proximity on the edge of the national natural monument Pouzdřany steppe. 9 white and 3 blue varieties grow on an area of almost 40 hectares. The flagship varieties of the winery are Riesling, Welschriesling, Pinot Blanc, and Chardonnay. In winemaking, the winery combines modern methods with traditional methods. For best results, they apply manual collection, gentle pressing, and filtration, peel maceration, maturation on fine sludge, etc.
